Salmon + Grapefruit Salad with Basil + Lemon Vinaigrette

Salmon is one of my favorite seafoods but for some, it’s too ‘fishy’. So if you’re taste buds prefer something different, try this with some other kind of fish or even chicken! The poached egg on top blends so perfectly with the tangy vinaigrette when you break the yoke, making it creamy and thick while the bright citrus from the grapefruit adds the perfect amount of sweetness and tang. Enjoy!

Ingredients :


  • 8-10 oz salmon filet
  • 2 sprigs rosemary
  • 3 lemon slices
  • 1 tbsp coconut oil
  • Salt + pepper to taste


  • 4 cups mixed greens
  • 1 grapefruit
  • 1/4 red onion
  • 1 celery stalk
  • 1 carrot
  • 1 large egg
  • 2 tbsp goat cheese
  • 2 tbsp walnuts


  • 1 cup fresh basil
  • 2 lemons
  • 1 garlic clove
  • 1 tsp red pepper flakes
  • 1/3 cup extra virgin olive oil

Equpiment :

  • Cutting board
  • Knife
  • Blender
  • Aluminum Foil
  • Small pot

Preheat your oven to 400degrees Fahrenheit. Cut a piece of aluminum foil big enough to make a pretty little package for your salmon. Place the salmon in the center of your foil and drizzle on the coconut oil. Salt and pepper the fish as much as you please then top with the sprigs of rosemary and the fit the lemon slices so you cover the entire piece of fish. Fold the aluminum foil so you make a nice sealed pouch so you’re essentially ‘steaming’ the fish. Place in the oven and remove after about 8-12 minutes. Salmon is fully cooked when it flakes apart easily.

Next, make the dressing by blending all the ingredients together and toss with your greens in a big bowl to fully coat ( I saved a little dressing to drizzle over top), throw that in the fridge while you prep all your veg. Cut your carrot, celery, onion, and grapefruit into bite-size pieces and toss in with your marinated mixed greens.

Last step is poaching your egg! Boil water and add a little bit of salt to flavor your egg. Once the water is boiling lower the heat to a slllllow simmer and grab a spoon to create a swirling vortex, once you’ve got a good tornado going, slowly drop the egg right in the center and watch it twirl around. For a runny egg leave in for no longer than 6 mins, keep it in longer if you like a hard yoke. Watch closely because your heating temperatures vary.

Portion out your greens evenly on two plates and then divid the salmon into two equal parts, you can either break the salmon up and distribute the pieces all over or leave it whole like I did. Top with the poached egg in the center and sprinkle on your goat cheese and walnuts. Enjoy!

The recipe serves 2, but the pictures show my measurements for one.
So if you’re only making this for yourself, just half all the ingredients.

    • You’re so awesome, thank you! The best way for me to get outta bed and get active is, to sleep with my workout clothes on :P! Sounds crazy but it totally works. Also try stretching first thing. It’s a lot easier to convince yourself outta bed to stretch then a run but once you’re done stretching, you’ll have a lot more energy, hopefully to work out! 🙂 Xx

  2. Do you drink alcohol? I know some people say it’s bad when trying to loose weight or tone up, what’s your opinion? And do you eat every 3 hours? Or you just def listen to your body?

    • Hi! I do drink alcohol but definitely not everyday. I try to keep it to weekends and special events, and when I do consume alcohol I try to make it as light as possible. No beer, just wine and mixed drinks, always with fresh fruit juices, never soda or store bought juice! I think everything is just fine in moderation. As for timing, I just listen to my body. Once you start giving your body what it really needs, you’ll be surprised by how in sync it will be with your mind! Xx
